Let me introduce myself… My name is Chef Glen Squires!

I have been a professional cook for 26 years. I did my culinary training at Holland College Culinary Institute of Canada. Originally from St. Phillip's, New Foundland, I now reside in Stratford, Prince Edward Island with my wife and two children.

I completed my on-the-job training at the Chateau Lake Louise, Alberta. Throughout my career I have had the opportunity to work in both family restaurants and large-scale operations.

After graduation I worked on the island at small scale restaurants during the summer and then I was off to Florida during the winter to cook at John's Island Club, a private member club, in Vero Beach, Florida.

After three seasons of this I decided to settle down on PEI and took a position at Red Shores Racetrack and Casino where I worked for 16 years. I was then given an opportunity to go back to the Culinary Institute to work as a Lab Technician, a position that I have been in for the last few years.

For the past few summers I have been providing catering services to tourists visiting the island and staying at beach houses and cottages on the island. Whether it is cooking for a few guests or a group I would be happy to provide you with a quote.
